How to prepare Russian farmer’s cheese zapekanka in no time
Russian farmer’s cheese zapekanka is really quick and easy to prepare. This creamy, cheesy and delicious oven-baked dish is flavourful and has a light texture. This Russian dish is classics. Zape-what? Za-pe-kan-ka. The name comes the Russian word “petch” which means to bake. You can also call it “baking”, it will not become less tasty because of this :-)
In Russia, you can find the Russian farmer’s cheese zapekanka everywhere. At the school canteen and at the dining table. You can prepare this Russian oven-baked dish from almost any combination of ingredients and often it’s being called “leftover dish”. You need a handful of ingredients and you are set to go. Any veggies left from a previous dish? Bake zapekanka. Boiled way too much pasta? Bake zapekanka:-)
Farmer’s cheese zapekanka could be sweet or savoury. You can eat it for breakfast, as a snack and as a dessert. So, all day long:-) In English they call the sweet breakfast cake Russian farmer’s cheesecake.

What about spoiling yourself once in a while with something new for dessert? Something tasty and at the same time very lazy, so you do not have to spend hours in the kitchen. So easy-peasy!
I do have an idea. I came up with this easy and healthy breakfast cake recipe for you today.
Not a culinary masterpiece, but still delicious. And besides that it is also healthy, there is no added sugar in it. What would you say?

You will need these ingredients :
– 1 tsp. baking soda
– 1 tbsp. apple cider vinegar
– 500 gr. farmer’s cheese (maybe lean or full)
(You may also use soft curd cheese, cottage cheese, quark or Greek yoghurt instead)
– 3-4 eggs
– 8 gr. (1 sachet of vanilla-flavoured sugar)
– 4 tbsp. semolina
– a handful of raisins (can also be more)
– a (round) baking dish/tin
This is how you proceed to prepare a Russian farmer’s cheese zapekanka:
- Leave the raisins in a bowl filled with warm water to soak.
- Mix the baking soda and vinegar well to foam.
- Stir the eggs through the farmer’s cheese well and add the soda-vinegar mixture.
- When everything is well mixed add the vanilla sugar and the semolina.
- Preheat the oven to 200C.
- Drain the raisins well and add to the mix.
- Grease the clean and dry baking tin well and sprinkle a little semolina over the edges.
- Pour the whole mixture into the baking tin and put it in the oven for about 40 minutes.
- Let your Russian cheesecake cool down before serving.
